Delicious Red Velvet Cookies are easy to make, super soft, and chewy! Since Christmas is here and cookie exchanges are upon us, I thought that this was a perfect time to share our favorite 4 ingredient recipe for Red Velvet Cookies with you!  As you might already know, I love baking simple and super cute desserts. These cookies are gorgeous and remind me of Santa and wintery snow. Want to know the secret? They’re a box of cake mix…yes…you read that right….. cake mix. With a little twist in the recipe on the back of the box, you can turn any cake mix into delicious, soft, perfectly chewy cookies.

Red Velvet Cookies

You see, I take a box of  Red Velvet Cupcake Mix, but I change the recipe on the box a little bit. No red food coloring is needed! With just a few tweaks to a cupcake or cake recipe, you can make beautiful cookies like these! How fun, right? If you’ve never made cake mix cookies, you’ve been missing out. These are the easiest Christmas cookies ever. Delicious red velvet flavor in every bite.

This Red Velvet Cookies recipe is wonderful because we cheat and use a red velvet cake mix to achieve a moist and delicious cookie. They are my son’s favorite Christmas cookies. We love to serve them around the holidays, on Valentine’s Day, and on the 4th of July! Red velvet recipes are so versatile like that.

Ingredients:

  • 1 box of Red Velvet cake mix

  • Butter – softened to room temperature

  • Eggs

  • All purpose flour

  • White sugar sprinkles

Red Velvet Cake Mix Cookies

Not only are Red Velvet Cake Mix Cookies delicious and perfectly soft and chewy, but these cookies also have only 4 ingredients! So, if you’re in a hurry or don’t have a lot of extra time to bake, this Christmas cookie recipe is for you! These cookies would also be fun if you add white chocolate chip cookies instead of the frosting! Simply add the ingredients to a large bowl and mix. Roll the cookie mixture into small cookie dough balls. Each cookie is about a small spoonful (or you can use a cookie scoop).

Red Velvet Cookies

Some may save red velvet for a special occasion, I say any day is a great day for red velvet! No special occasion is needed. You might also like my recipe for Red Velvet Poke Cake too! Begin by preparing your cookie sheets with parchment paper. You can also use silicone mats for baking.

Red Velvet Cookie Recipe

The cookie dough isn’t super sticky so you can easily roll it into perfect round cookie dough balls. But, I like to take it a step further to make the cookies look EXTRA perfect. Using the bottom of a cup, gently press down on the round dough balls on the baking sheet. Then, tap and press the cookies with the tips of your fingers into perfect round shapes.

Red Cookies

Bake in the oven for ten short minutes and that’s it! Let the cookies cool (they cool quickly) then frost them with either vanilla, cheesecake, or cream cheese frosting. Pour white sugar sprinkles onto a plate. Then, dip the frosting into the white sugar sprinkles. Another option would be to sprinkle the tops of the cookies with powdered sugar to look like snow. White chocolate chips would be cute too!

Cook Time: 12 minutes
Total Time: 30 minutes
Servings: 24 cookies

Equipment

  • Mixing bowl
  • Electric Mixer
  • Parchment paper
  • Baking sheet

Ingredients 

  • 1 box Red Velvet cake mix
  • ½ cup Butter, softened to room temperature
  • 2 Eggs
  • 2 tablespoons flour
  • White sugar sprinkles

Instructions 

  • Add all of the cake ingredients to a bowl and mix well
  • Place small spoonfuls of dough onto a lightly greased cookie sheet
  • Bake at 350 for 10-12 minutes
  • Spread either vanilla or cream cheese frosting on top of the cookies
  • Place the frosting on the cookies once they are completely cooled
  • Pour white sugar sprinkles onto a plate
  • Dip the frosted red velvet cookies into the sprinkles
