Chocolate Cookies with Peppermint Pattie Frosting
Well, I have a confession. I love cookies, particularly the chocolate kind! Today I’m going to teach you this easy chocolate cookie recipe and show you how I make my own Peppermint Pattie frosting to go on top. Peppermint Patties are already very tasty, but add that flavor to a chocolate cookie with frosting and you’ve created cookie that will leave your friends and family begging for more!
For my super easy chocolate cookies, I take a box of Betty Crocker Chocolate Cake Mix but I change the recipe on the box a little bit. With just a few tweaks to a cupcake or cake recipe, you can make scrumptious cookies like these! How fun, right? Here is the actual recipe I use with the ingredients straight from the box:
- 1 box of Betty Crocker cake mix
- 1/2 cup (1 stick) of butter
- 2 eggs
- 2 tbsp. flour
- Add all of the cake ingredients to a bowl and mix well
- Place small spoonfuls of dough onto a lightly greased cookie sheet
- Bake at 350 for 10-12 minutes. (Makes about 2 dozen small cookies)
For the frosting you will need:
- 5-6 miniature York Peppermint Patties
- 3 cups powderd sugar
- 1/3 cup of butter
- 2 tbsp. milk
Mix all of the frosting ingredients together (crumble the peppermint patties into a few small pieces beforehand) and whip on high until a fluffy texture is accomplished! You might need to add 1 or 2 additional tablespoons of milk into the frosting depending on how creamy and smooth you want the frosting to be. Place the frosting on the cookies once the cookies have completely cooled.
