For The world’s easiest Broccoli Cheese Soup recipe, you will need:

  • 6 cups of frozen broccoli cuts
  • 2.5 cups of evaporated milk

Steam the broccoli for about 10 minutes or until it is tender and drain the remaining water from the pot. Add the evaporated milk to the broccoli at medium-low heat, stirring occasionally (milk can burn easily so keep your eye on it). Once the soup has started to gently boil over the medium-low heat, add in the cheese and stir until completely melted.

Cover the soup, turn the heat on low, and let it cook for 45 minutes, stirring occasionally. Serve hot and, if you love cheese as much as we do, add a little bit to the top before serving. Soup is very filling and excellent for cool evenings.
