Pin It NowIngredients:
- All-purpose flour
- Baking powder
- Sugar
- Salt
- Buttermilk
- Melted butter
Instructions:
Begin by mixing the dry ingredients (flour, baking powder, sugar, and salt) in a medium bowl with a whisk. Once those ingredients are combined, stir in the buttermilk. Regular milk won’t work for this recipe, but buttermilk is conveniently located next to the milk at the grocery store. Can you use low-fat buttermilk? Absolutely! Both kinds work great with my Butter Swim Biscuit Recipe.
Once the simple and delicious dough is mixed, melt a stick of butter in the microwave. Prepare an 8×8 or 9×9 square dish with a thin layer of nonstick spray. Then, pour the melted butter into the bottom of the dish. The biscuit dough is now swimming in butter:)
Recipe Tips
- Don’t Use a Small Baking Dish – I recommend using an 8×8 inch or 9×9 inch deep baking pan for these butter swim biscuits.
- Don’t Over-Mix – If you over-mix the dry ingredients with buttermilk, the dough can get dense instead of fluffy.
Scoop and drop the biscuit dough over the melted butter. This is easily done with a rubber spatula. Once all of the dough is in the baking dish, gently push the dough around so that it is evenly spread throughout. It doesn’t have to be perfect, but you do want the dough to bake evenly. It’s an easy job, so feel free to get the kids to help with this part:)
Next, use a spatula to “cut” square biscuit pieces. These don’t have to be perfect, but they sure come out perfect once the dough is baked! It’s actually really cool:) If you don’t have a perfectly square dish, that’s ok too! Use what you have, and keep your eye on the biscuits as they bake. No foil is needed for this easy recipe. All you need is for the top to turn golden brown. YUM!
Freezing Butter Swim Biscuits
Wrap cooled biscuits tightly with foil or plastic wrap and then in a freezer-safe storage bag. If they are wrapped tight and air can’t get to them, they should remain fresh for a couple of months.
Storage
Store the leftovers in the fridge in an airtight container or cover them in plastic wrap.
