Tater Tot Casserole

Cheesy Tater Tot Shepherd's Pie Casserole - Layers of amazing flavor or an easy and delicious dinner any night of the week!

Ingredients

For the Beef Mixture

  • 2 pounds ground beef
  • 1 cup diced onion (fresh or frozen!)
  • 1 Tablespoon minced garlic
  • 15 ounce can of peas and carrots, drained

For the Cheese Sauce

  • 2 Tablespoons butter
  • 2 Tablespoons flour
  • 1 cup milk
  • 8 ounce cream cheese, softened
  • 1 cup shredded cheese
  • ¾ bag bag of frozen tater tots
  • *Optional: Sliced green onion

Instructions

  • Preheat oven to 350°
  • Prepare a pan with non-stick spray cook brown the ground beef over medium heat until almost brown.
  • Add the onions and garlic and continue to cook over medium heat.
  • Once brown, drain the excess liquid and add the (drained) peas and carrots.
  • Set aside on another burner on simmer while you make the cheese sauce!
  • In a pot, whisk together the butter and milk until cream on medium-low heat.
  • Add the milk and whisk again until fully combined
  • Place cream cheese and shredded cheese and stir constantly on low heat until it is fully melted.
  • Prepare the baking dish with non-stick spray
  • Place the beef mixture into the bottom of the dish
  • Pour the cheese sauce on top and even it out with a spatula
  • Arrange (or dump!) frozen tater tots on top
  • Bake for 1 hour
  • Broil for a couple of minutes to make the tater tots crispy (optional)
  • Garnish with sliced green onion
