Cake Mix Peanut Butter Cookies

These Cake Mix Peanut Butter Cookies are ultra-rich in flavor, soft, chewy, easy to make, and topped with a sweet sugar coating.

Ingredients

  • 1 box White Cake Mix
  • ¼ cup Packed Brown Sugar
  • 2 tablespoons Water
  • 1 cup Creamy Peanut Butter
  • ¼ cup Vegetable Oil
  • 2 Eggs
  • 1 teaspoon Vanilla Extract
  • Sugar (to roll the cookie dough balls in before baking)

Instructions

  • Preheat oven to 350°
  • In a mixing bowl, combine cake mix, brown sugar, water, peanut butter, oil, eggs, and vanilla extract with an electric mixer at low speed
  • Prepare a baking dish with parchment paper or nonstick spray
  • Roll dough into 2″ balls – or in the size desired (adjust the baking time as necessary)
  • Gently, roll the dough balls into granulated sugar, as pictured
  • Place sugared peanut butter cookie dough balls a few inches apart on the cookie sheet (they don’t spread much during baking)
  • Using a fork, gently stamp the cookies
  • Bake for 10-12 minutes – Don’t overbake!
