Plus, they’re wonderfully simple to make. Just add peanut butter and brown sugar to a box of cake mix and you’re already halfway there.
These easy Cake Mix Peanut Butter Cookies are THICK, soft, and chewy. Mix in the rest of your baking ingredients and your dough will be ready for shaping, no cooling required. Unlike other cookie recipes, there’s a good chance you have everything you’ll need for these peanut butter cookies right in your pantry:
Peanut Butter – The type of peanut butter for perfect peanut butter cookies is important. You will need a smooth and creamy peanut butter
Sugar – These peanut butter cookies will have a combination of white sugar (granulated sugar) and light brown sugar. This helps create that chewy texture you’re craving in peanut butter cookies!
These puffy and thick peanut butter cookies stay soft for days and literally melt in your mouth. Plus, they are no chill cookies, meaning you can make them and eat them in less than 20 minutes with just a few simple steps. Get ready to fall in love with a cookie.
Roll the dough into about 2″ balls. Kids are great at helping with this part! You can make smaller or larger cookies if you prefer, just adjust the baking time accordingly. Then, roll them in sugar just before using a fork to make the pretty peanut butter cookie pressmark.

Not ready to bake them right away? Here are some tips:
Freezing Cookie Dough. Once you have rolled all the peanut butter cookie dough balls into the granulated sugar, slide them into a freezer bag. Seal and freeze cookie dough for up to 3 months. When ready to bake, place on a baking sheet and bake halfway. Remove from oven, press dough with a fork, and finish baking. You may need to add a few extra minutes to the baking time.
Freezing Peanut Butter Cookies. If you find yourself needing to freeze the baked cookies, slide into an airtight container or freezer bag. Freeze for up to 3 months. Thaw on the counter overnight and enjoy.
Finally, bake! But, don’t overbake! Overbaked cookies are dry and hard and not soft and chewy as they should be. Make sure you bake until they appear just set, even a little glossiness in the center is okay. They will continue baking up on the hot baking sheet out of the oven. I find 11 minutes is perfect for 2″ dough balls.

Cake Mix Peanut Butter Cookies
Equipment
- Fork
- Parchment Paper or Nonstick Spray
- Baking sheet
- Mixing bowl
- Electric Mixer
- Small Dish for Rolling Dough in Sugar
Ingredients
- 1 box White Cake Mix
- ¼ cup Packed Brown Sugar
- 2 tablespoons Water
- 1 cup Creamy Peanut Butter
- ¼ cup Vegetable Oil
- 2 Eggs
- 1 teaspoon Vanilla Extract
- Sugar (to roll the cookie dough balls in before baking)
Instructions
- Preheat oven to 350°
- In a mixing bowl, combine cake mix, brown sugar, water, peanut butter, oil, eggs, and vanilla extract with an electric mixer at low speed
- Prepare a baking dish with parchment paper or nonstick spray
- Roll dough into 2″ balls – or in the size desired (adjust the baking time as necessary)
- Gently, roll the dough balls into granulated sugar, as pictured
- Place sugared peanut butter cookie dough balls a few inches apart on the cookie sheet (they don’t spread much during baking)
- Using a fork, gently stamp the cookies
- Bake for 10-12 minutes – Don’t overbake!
