Unlike other cookie recipes, there’s a good chance you have everything you’ll need for these peanut butter cookies right in your pantry:

Peanut Butter – The type of peanut butter for perfect peanut butter cookies is important. You will need a smooth and creamy peanut butter

Sugar – These peanut butter cookies will have a combination of white sugar (granulated sugar) and light brown sugar. This helps create that chewy texture you’re craving in peanut butter cookies!

Peanut Butter Cookie Dough

These puffy and thick peanut butter cookies stay soft for days and literally melt in your mouth. Plus, they are no chill cookies, meaning you can make them and eat them in less than 20 minutes with just a few simple steps. Get ready to fall in love with a cookie.

Peanut Butter Cookie Dough in Sugar

Roll the dough into about 2″ balls. Kids are great at helping with this part! You can make smaller or larger cookies if you prefer, just adjust the baking time accordingly. Then,  roll them in sugar just before using a fork to make the pretty peanut butter cookie pressmark.

Recipe Tips

Freezing Cookie Dough. Once you have rolled all the peanut butter cookie dough balls into the granulated sugar, slide them into a freezer bag. Seal and freeze cookie dough for up to 3 months. When ready to bake, place on a baking sheet and bake halfway. Remove from oven, press the dough with a fork, and finish baking. You may need to add a few extra minutes to the baking time.

Freezing Peanut Butter Cookies. If you find yourself needing to freeze the baked cookies, slide them into an airtight container or freezer bag. Freeze for up to 3 months. Thaw on the counter overnight and enjoy.

These Cake Mix Peanut Butter Cookies are ultra-rich in flavor, soft, chewy, easy to make, and topped with a sweet sugar coating.

Finally, bake! But, don’t overbake! Overbaked cookies are dry and hard and not as soft and chewy as they should be. Make sure you bake until they appear just set, even a little glossiness in the center is okay. They will continue baking up on the hot baking sheet out of the oven. I find 11 minutes is perfect for 2″ dough balls.
