Course: Lunch
Cuisine: American
Keyword: salad, wrap
Servings: 3 wraps

Equipment

  • Large bowl
  • Spoon or tongs to toss the salad in the dressing

Ingredients

  • 3 cups chopped romaine lettuce
  • 3 boneless skinless chicken breasts cooked and cut into 1-inch cubes (about 2 pounds)
  • 1 cup Italian croutons
  • ¾ cup Cesar dressing
  • ½ cup shredded Parm cheese
  • 3 flour tortilla wraps burrito size

Instructions

  • Make the filling. In a large bowl, combine the lettuce, chicken, dressing, croutons, and Parmesan cheese and toss until well coated in dressing.
  • Assemble your wraps. On a flat surface, lay out 3 tortillas (or one at a time) and divide the Caesar salad evenly between each wrap. If you like a toasty, warm tortilla, you can heat it over low heat in a large skillet or follow the microwave instructions on the package.
  • Wrap it up. Fold the tortilla up on the right and left sides towards the midline. Then, fold the side closest to you away from your body while pulling it tightly into a roll. You can use a toothpick to hold the tortilla together if needed, just remember it’s there when you serve it.
  • Cut and serve. Cut the wraps in half or serve whole, chilled or at room temperature.

Notes

Storage Instructions:
If you have leftover chicken Caesar wraps, you can transfer them to an airtight container. They’ll keep for 1-2 days in the refrigerator.
What's the best chicken to use?
My favorite quick option is to pick up a rotisserie chicken. It has great flavor and is quick. You can also purchase already cut and packaged cooked chicken or bake your own, just make sure the flavor seasoning you use will complement the Caesar wrap.
