  • 1 cup Cottage cheese (drain excess liquid)
  • 2 Eggs
  • 1 teaspoon Garlic powder
  • 1 teaspoon Italian seasoning

  • Preheat Oven. Preheat your oven to 350℉
  • Blend. Put the cottage cheese, eggs, and seasonings into a blender. Combine the mixture at a low speed for about 30 seconds. It should be smooth, with perhaps a couple of bubbles in it.
  • Prepare. Prepare your pan with parchment paper. Give the parchment paper a quick coat of non-stick spray.

  • Pour. Pour the flatbread mixture onto the center of the parchment-lined baking sheet. Use a rubber spatula to scrape the sides of your blender to release all the mixture onto the pan.
  • Shape. Use a rubber spatula to shape the bread as desired (e.g., circle or rectangle).
  • Bake. Bake the cottage cheese flatbread in the oven for approximately 30 minutes, or until the bread is golden brown.
  • Optional: Use a pizza cutter or a knife to remove the outermost edges of the bread, giving the appearance and texture a more even look.
