Did you know that we all need healthy fat… especially kids? We need fat for proper growth, development, absorption of vitamins, and for hormones to work properly. Our brains are 60% fat, which is why it is so important for kids and their developing brains to get enough fat! Ok ok enough of the science stuff and on to this delicious recipe!

Healthy Pineapple Raspberry Popsicles

Makes 6-8 popsicles or 6 popsicles and a smoothie :).

Ingredients:

  • 1 pineapple or about 4 cups chopped
  • 1 cup raspberries
  • 1/2 cup full fat coconut milk

Directions: Cut up pineapple (or use frozen pineapple chunks), place ingredients in a blender, and blend until liquified. Pour mixture into the popsicle molds and freeze until solid at least 3-4 hours. Enjoy, preferably next to a pool while relaxing..

Not only are these popsicles delicious, but you can feel good about all the healthy ingredients. Healthy doesn’t have to be hard or tasteless! You can enjoy your popsicle and eat it too.
