Old Fashioned Granola Muffins

Old fashioned granola muffins just like grandma knows how to make! If you are a lover of all things homemade, then you are going to seriously appreciate the goodness of this homemade muffin recipe! With the crunch of granola and the irresistible taste of true ingredients, you can’t go wrong! You can’t make these from a pre-made box from the store, but you can make something your family will devour in just a few minutes.

For this old fashioned recipe, you will need:

  • 5 oz of plain white flour
  • 2.5 teaspoons of baking powder
  • 2 tables of caster sugar (don’t have any? I’ll explain a quick an easy way to make it – keep reading)
  • 8 oz of milk
  • 2 oz melted butter
  • 1 egg
  • 7 oz of Nature ValleyTM Oats ‘n Honey granola
  • Muffin tins or the silicon baking cups I used in these pictures (found here)
  • Extra granola for the top of the muffins (about 1 teaspoon per muffin)
  • Powdered sugar to dust on top (optional)

Not sure what caster sugar is? That’s ok! If you have regular granulated white sugar, you can create a caster sugar substitute in 1 minute. Simply put 1/2 cup of granulated white sugar in a food processor (or a VitaMix if you have one) and blend it for about 1 minute. That’s all it takes! You’ll need 2 tablespoons for this recipe. Caster sugar is not as fine as powdered sugar, but it is finer than regular granulated sugar.

Combine the dry ingredients first. Then, add in the wet ingredients and the granola but don’t over mix! The batter will be slightly runny and lumpy, but that’s how it should be! Add a teaspoon of granola to the top of each muffin before baking them.

Bake at 400 degrees F for about 15-20 minutes until golden (use the good old toothpick test just in case).

If your muffins overflow, that’s ok, just hurry and eat the overflow before anyone notices. We don’t judge here:)

Dust with powdered sugar just after you take them out of the oven.

My kids and I made these granola muffins together. If you have young kids (or grandkids) at home, let them pour the ingredients into the mixing bowl. If they’re old enough, let them try to measure stuff out! Go ahead, let the flour fly, get a little baking powder on the counter, and by all means, have fun. Muffins don’t have to be perfect and they don’t have to be completely cooled to eat. Eat them with a meal or grab a glass of milk and devour them instantly! They also make a super satisfying late night snack if I do say so myself.
