Now that fall is here and school is back in session, we’re all about quick, easy, and delicious dinner ideas. Just like most families, our afternoons are extremely busy with sports, homework, and various activities. That’s why we love our crock pot so much! If you’ve been following me here on Facebook, you’ve probably seen all of the delicious crock pot and slow cooker recipes I’ve been saving. Today I’m sharing our creamy and irresistible crock pot scalloped potato recipe!
Crock Pot Scalloped Potatoes
This is definitely one of those recipes that saves us sometimes. It doesn’t require a lot of ingredients, it’s easy to throw together, and you can let it cook while you’re busy being a parent!
The potatoes will be more creamy with whole milk, but low fat and 2% will work too! You will need to grab an extra 6 oz bag of shredded cheese at the store in order to make a full crock pot sized recipe of scalloped potatoes. Each bag has about 1.5 cups of cheese. Some will go in the creamy rue recipe and some will go on top in the crock pot.

It’s not secret that I also LOVE baked potatoes. We add a little baked potato flare to our scalloped potatoes by adding bacon, sour cream, and green onion on top. The bacon adds that additional mouthwatering crunch to the top of the cheesy creamy scalloped potatoes.
Imagine coming home to creamy, cheesy, hot scalloped potatoes topped with sour cream and bacon! Pair it with some baked chicken, steak, sausage, or even ham. Add a fresh salad on the side and enjoy! This recipe serves about 6 people, so depending on the size of your family, you might have leftovers! PS – heat the dinner up for lunch the next day. Good luck getting your hands on the leftovers before someone else in the house though!
Planning meals and preparing as much as you can in advance is the best and easiest way to make sure you have a hot and yummy meal on the table each night. We do our meal planning on Saturdays and our grocery shopping on Sundays. We also prepare school lunches on Sundays by packaging up as much as we can beforehand. Having a couple of your family’s favorite crock pot recipes in the weekly menu helps the whole household transition into fall smoothly!

You Will Need
To make slow cooker scalloped potatoes, you will need:
- 1 bag of golden potatoes (skinned and sliced thin)
- 1 sweet onion – diced
- 2 tbs. butter
- 2.5 cups of shredded cheddar cheese
- 2 cups of milk (whole milk is best, but 2% works too!)
- 1.5 tbs. all-purpose flour
- Non stick spray
- Paprika (optional)
- Sour cream
- Bacon (cooked)
- Sliced green onion
In the crock pot:
- Use non-stick spray to prepare the crock pot
- Place a layer of sliced potatoes on the bottom topped with diced sweet onion, salt, and pepper.
- Repeat until all of the potatoes are used (about 4 layers)
For the cheesy rue:
- Melt the butter in a sauce pan over medium heat
- Add in the milk, stirring constantly (a whisk is great for this job!)
- Once the milk has come to a very light boil, add the flour.
- Reduce heat to low and stir constantly for about 3 minutes or until the sauce thickens.
- Add 2 cups of cheese and stir until completely melted
- Pour the rue over the potatoes in the crock pot and sprinkle 1/2 cup of cheese on top.
- Cover and cook on low for 6 hours.
