Cucumber Sandwiches are light, fresh, and delicious little sandwiches. Also known as Tea Sandwiches, they are wonderful for gatherings like Mother’s Day, baby showers, picnics, or sunny days with company. Soft bread, creamy spread, and crisp cucumber slices make these pretty little sandwiches irresistible. They disappear quickly!

A delicious tray of cucumber tea sandwiches for the perfect afternoon tea! Everyone loves finger foods that are cool, fresh, light, and tasty. Cucumbers are a summertime staple, so keep this recipe handy to whip them up quickly this season!

Cucumber Sandwiches are light, fresh, and delicious. Also known as English Tea Sandwiches. Soft bread, creamy spread, and crisp cucumber!
  1. Cucumber – peeled or unpeeled, based on preference.
  2. Chive and Onion Cream Cheese – can be substituted with plain cream cheese, fresh herbs, and spices, if desired.
  3. Salted Butter – the salted butter adds a delicious flavor to cucumber.
  4. Soft Bread – can be plain white bread, wheat bread, or your favorite bread of choice.
  5. Salt and Pepper – measure with your heart!
Ingredients

Peel the cucumber. This is an optional step, based on preference. For additional color, texture, and crunch, you can leave the cucumber skin on. Place the slices on paper towels. The paper towels will help absorb the water within the cucumber slices while you prepare the bread slices.

Prepare the bread slices. Add a generous layer of the chive and onion cream cheese to one slice of bread, and a generous layer of salted butter the other slice of bread. These thick layers will prevent the sandwiches from getting soggy from the water in the cucumber slices.

Add the cucumber slices. Depending on the size of your cucumber, place about 4 thin cucumber slices on the bread.

Sprinkle on salt and pepper

Sprinkle the cucumber with salt and pepper. Salt and pepper add a touch of flavor to the sandwiches. This is also a good time to add additional flavors, if desired.

  • Herbs – like dill and/or chives
  • Lemon juice – it adds a tangy flavor
  • Sliced red onion – or pickled onion
  • Raddish slices
Cut the crust off of the sandwiches

Cut off the crust. Traditional cucumber tea sandwiches are served with the crust removed. To do this, use a sharp serrated bread knife. Gently slice off the crust creating perfect little sandwiches squares.

Cut the squares into triangles. Cut the sandwich squares diagonally into small triangles and enjoy! Consider serving the cucumber sandwiches on pretty dishes, a cake stand, fine china, or alongside tea cups with refreshments.

Cucumber Sandwiches

  • 10 slices bread
  • ½ Cucumber
  • 4 ounces Chive and onion cream cheese – at room temperature
  • ¼ cup Salted butter – at room temperature
  • Salt and pepper – measure with your heart

Instructions

    Slice the cucumber into thin pieces
  • Prepare the bread slices. Add a generous layer of the chive and onion cream cheese to one slice of bread, and a generous layer of salted butter the other slice of bread.
    Add the cream cheese and butter to the bread slices.
  • Add the cucumber slices. Depending on the size of your cucumber, place about 4 thin cucumber slices on the bread.
    Add the sliced cucumber
  • Sprinkle the cucumber with salt and pepper. Add addtional spices and flavors, if desired.

  • Cut off the crust. Use a sharp serrated bread knife to achieve the cleanest slices.

Notes

Storage:
As long as the bread slices are covered with a generous layer of cream cheese and butter, the water from the cucumber slices should not make the bread soggy. Store the leftovers in a zip-top bag in the refrigerator for up to 2 days.
