Welcome to Smart School House! Boy oh boy do I have a fun recipe to share with you today! This 4-ingredient no-bake Jello Cheesecake is so colorful and delicious. If you already like Jello and cheesecake, you’re going to love this creative recipe! It reminds me of a Jello Unicorn Pie or even a Jello Galaxy Pie. What’s great is that you can make the filling low carb and sugar free (see? It’s healthy! Haha!).

Jello Cheesecake - a delicious, creamy, Jello cheesecake recipe that can be low carb and sugar free! This no-bake Unicorn Cheesecake tastes just as magical as it looks.

Jello Cheesecake

To make Jello Cheesecake, you will need the following ingredients and supplies:

  • Two 8 oz packages of cream cheese at room temperature. It is important that the cream cheese is not cold!
  • Jello flavors (opt for the sugar free if you want it to be low carb): strawberry, berry blue, lime, and grape
  • Boiling water
  • Ice cubes
  • Mixing bowls
  • Electric mixer
  • Pie crust of choice
  • Spoons
  • (optional): white chocolate or melting chocolate to drizzle on top
  • (optional): sprinkles

Jello Cheesecake Recipe

  1. Prepare the Jello in 4 additional mixing bowls: add 1 cup of boiling water to the Jello powder. Stir it until completely dissolved. Add 2 cups of ice and 1 cup of water to the bowl. Gently stir for about 3 minutes (you’ll see it get thicker!). Repeat for all 4 colors/flavors.
  2. Set the Jello bowls aside until the bowls is not so cold from the ice anymore (about 20 minutes).
  3. Prepare your pie crust as desired (can be homemade, can be frozen and baked, or can be ready to fill!)
  4. Make sure the cream cheese is at room temperature. Evenly separate the cream cheese into 4 new mixing bowls.
  5. Using an electric mixer, mix the cream cheese until it is smooth. 
  6. Add 1 cup of the Jello mixture into each of the cream cheese bowls. Feel free to save the excess Jello! I love to make individual Jello snack cups with ours. Check out that tutorial here. These homemade Jello cups will save you LOTS of money at the grocery store because the prepackaged ones are pricey!
  7. Using an electric mixer, mix the 1 cup of Jello and the cream cheese on high for at least 3 minutes. You’ll see it get foamy! 
  8. Rinse the mixer and repeat step 6 the next 3 colors. 
  9. Place all 4 Jello cheesecake filling bowls into the refrigerator for 1-2 hours.
  10. Using a spoon, add the Jello cheesecake colors 1 dollop at a time to the pie crust. 
  11. Clean the spoon and gently smooth the top of the cheesecake to blend the dollops of colors together. 
  12. Place in the refrigerator for at least 1 hour or until you’re ready to serve it.
