The recipe is incredibly easy, and yet the flavor possibilities are endless. For my recipe, you simply need vanilla ice cream, Lucky Charms, and self-rising flour. That’s it! I’m not joking… this recipe is so easy that kids can make it too!

The trick to baking bread with a tender crumb is to make sure the ice cream is melted and smooth before mixing it with the self-rising flour. It is also important to use full-fat regular ice cream:)

Ingredients:
- Lucky Charms Marshmallows – Picked out from the box of cereal (kids are great at this job!)
- Vanilla Ice Cream – Full-fat ice cream, not low fat or low sugar.
- Self-Rising Flour – A perfect blend of all-purpose flour, baking powder, and salt

As seen in the recipe video within this post, begin by letting your ice cream melt. Stirring it up helps make the melting process go a little faster. Stir the ice cream until mostly melted and smooth. Next, combine the soft, smooth ice cream and the self-rising flour. Do not overmix!

Pour the batter into a bread loaf pan prepared with non-stick spray. Now it’s time to top the bread with magical little marshmallows! I go all out and cover the bread with a lot of marshmallows! Some will sink into the bread as it bakes.

Baked to perfection in 40 minutes, this Ice Cream Bread will literally wow you! Tastes delicious and can be made with so many flavors. In addition to these flavors, consider mixing and matching other ice cream flavors and toppings!

Lucky Charms Ice Cream Bread
Equipment
- 8.5″x4.5″ bread loaf pan (anything from 8×4-9×5 will work)
- Non-stick spray
- Mixing Bowls
Ingredients
- 2 cups Full-fat vanilla ice cream
- 1½ cups self-rising flour
- 1-2 cups Lucky Charms marshmallows
Instructions
- Preheat oven to 350℉
- Prepare a loaf pan with non-stick spray
- Combine melted ice cream with self-rising flower
- Pour the batter into the loaf pan
- Top with marshmallows
- Bake for 40 minutes
- Allow the bread to cool completely before removing it from the loaf pan
- Cut into thick slices and enjoy!
