Mint Brownies are rich and fudgy brownies with a tasty mint layer and delicious Dove chocolate topping. They are the perfect recipe for chocolate and mint lovers.

Mint Brownies
These soft, fudgy, mint brownies are perfect for parties and get-togethers. These rich and fudgy mint brownies are PERFECTION.

Ingredients:
- Brownie Mix (plus oil and egg listed on the back of the box). My homemade brownies would work, too!
- Butter Cream frosting
- Dove Chocolates
- Mint Extract
- Food Coloring

Recipe:
Prepare a cake pan with parchment paper or non-stick spray. I used an 8″x8″ pan, but you can use whatever pan you prefer. The box of brownies will provide the baking times for various-sized cake pans.

Next, prepare the brownie mix according to the instructions on the back of the box. Homemade brownies also work well for this recipe!
Recipe Tip
Don’t overmix brownie batter! Overmixing allows more air into the batter, giving you lighter, cake-like brownies instead of dense, rich ones.
I stir together the ingredients with approximately 50 “stirs”. LOL! While it’s not a science I can prove, it’s a general rule I abide by that works well every time to achieve fudgy brownies instead of cakey brownies. It’s just enough “stirs” to combine the eggs, water, oil, and powdered brownie mix.

Let the baked browns cool completely. If you’re in a hurry, pop the brownies in the refrigerator to speed up the process. Bake the brownies according to the time on the box and your cake pan size.

While the brownies are cooling, prepare the frosting. Place the frosting in a mixing bowl and use food coloring to make it green. Next, add a little bit of mint extract to the frosting.

Once the brownies are cooled, frost them with the green mint frosting. I do not use the whole tub of frosting because I prefer a thin layer of mint frosting. So, frost to your heart’s desire 🙂 Place the frosted brownies in the refrigerator to allow the frosting to stiffen slightly in preparation for the next layer.

Next, melt the Dove chocolates in the microwave. Years ago, I discovered that Dove chocolates melt so well! Place the unwrapped chocolates in a microwave-safe dish and melt them in 30-second intervals. Melted Dove is incredibly smooth and creamy.

Pour the melted chocolate over the mint frosting layer. Similar to the frosting layer, use as much melted chocolate as you prefer. I use just about two full bags of Dove chocolate for a nice thick layer.

Using the back of a spoon, spread the chocolate evenly over the frosted brownies. Allow the melted chocolate to cool and harden again. If you’re in a hurry, you can pop the brownies back in the refrigerator again!

Once the chocolate has hardened, it’s time to cut the mint brownies! To get a clean even cut, I recommend using a large kitchen knife. Just look at how cool and delicious these brownies are! Grab a glass of milk and enjoy.

- Mix the brownie batter with the eggs, oil, and water. Don't overmix the batter! Overmixing causes a cake-like texture as opposed to the desired fudgy brownie texture.

- Bake the brownies according to the instructions on the back of the brownie box. Various size cake pans will bake for different lengths of time.

- Allow the baked brownies to cool completely. If you're in a hurry, place the brownies in the refrigerator to speed up the cooling process.
- Place the frosting in a mixing bowl. Mix in food coloring to achieve the desired shade of green.
- Mix in the mint extract.

- Frost the cooled brownies. Use as much frosting as desired. I prefer a thin layer, which means I don't use all of the frosting. Frost to your heart's desire 🙂

- Place the brownies in the refrigerator to stiffen the frosting while you prepare the chocolate.
- Placed unwrapped Dove chocolates in a microwave-safe dish. Melt the chocolate in 30-second intervals until smooth and creamy.

- Pour the melted chocolate over the mint frosting. Smooth the chocolate into an even layer.

- Allow the chocolate to cool and harden. If you're in a hurry, pop the mint brownies in the refrigerator to speed up the cooling process.

- Using a large kitchen knife, cut the brownies into small squares. Enjoy!
