Easter Peeps Cookie Bars are everyone’s favorite Peeps mixed with sugar cookies. Not only are they festive looking, but they are also so fun to make! Be sure to get the kids involved, because in the words of my daughter, “These are Heaven on Earth!” Sugar cookies are her favorite and she eagerly waits for Peeps to show up on the grocery shelves each year. Peeps Sugar Cookie Bars

Whether it’s a special occasion or a regular day and you have a sweet tooth, these bars are fantastic. This recipe is adapted from our SUPER popular Sugar Cookie Cheesecake Bars recipe. Ingredients and Supplies:

  1. Sugar cookie dough (we used pre-made sugar cookie dough)
  2. Easter Peeps
  3. Non-Stick spray
  4. Square baking dish
Peeps Bars Ingredients

Instructions:

Using a knife, you can cut the roll of sugar cooking dough right in half. Press half the dough around an 8×8 inch dish. This creates the bottom “crust” of the cookie bars. Then, toss in some Peeps in various colors. We use about 8-10 Peeps in various colors.

Then, use the remaining cookie dough to create the top of the cookie bars. Do this by breaking the dough into pieces over the Peeps. The cookie dough expands as it bakes, filling up the entire dish. The Peeps will need to melt a little before you can swirl them around, so I’ll explain that part next!

How to Make Peeps Bars

At 350 degrees, bake the dough for 8 minutes. While it is baking, spray a spatula with non-stick spray. Quickly remove the dish from the oven and use the spatula coated in non-stick spray to gently separate and twirl the melted Peeps. This creates the pretty pastel swirls in the cookie bars. Try to only mix the top of the cookie bars and not the bottom “crust” part. Quickly put the dish back in the oven for at least 12 more minutes or until the sugar cookie dough is baked and golden.

How to Make Peeps Bars

Peeps tend to turn brown in the oven, but because you opened them up and mixed the marshmallows around, the cookie bars have a pretty pop of pastel, perfect for spring! Let the dish cool completely, then refrigerate for about an hour.

Recipe Tip

The trick to cutting the cookies into bars has 2 parts – First, they need to be cold. Second, use a butter knife that has a little non-stick spray on it. I do this by spraying non-stick spray on a paper towel. Simply wipe the knife on the paper towel between cuts and it prevents the marshmallow from sticking!

Equipment

  • Non-stick spray (Pam)
  • 8×8 inch square baking dish
  • Spatula (not wooden)
  • Butter knife

Ingredients 

  • 16.5  oz tube of sugar cookie dough (found in the refrigerated cookie area of any grocery store)
  • 8 Peeps (more or less as desired)

Instructions 

  • Preheat oven to 350°
  • Prepare a baking dish with nonstick spray
  • Separate the cookie dough in half
  • Press one half of the cookie dough into the bottom of a square baking dish prepared with non-stick spray
  • Add Peeps in various colors
  • The rest of the cookie dough is used in chunks on top of the peeps
  • Bake for 8 minutes
  • While baking, prepare the spatula with non-stick spray
  • Remove the dish from the oven and gently twirl and mix the melted Peeps. Try to not push down into the bottom “crust”
  • Return the dish to the oven and bake for 12 minutes or until the sugar cookie dough is golden
  • Let the dish cool
  • Once cooled, place the dish in the refrigerator for about an hour
  • Use a butter knife coated with non-stick spray to cut the cookies into square bars

Notes

Store the leftovers in the refrigerator.
