Just a few fresh ingredients are all it takes to make these baked tomatoes with prosciutto! Whether you make them as a lighter post-holiday dish in the winter, or with fresh tomatoes in the summer, you simply can’t go wrong with this tasty dish.

Tomatoes with mozzarella, shredded parmesan, and prosciutto

Not all tomatoes will bake the same way. If they are too juicy, they are messy when baked. But, Roma tomatoes broil nicely while keeping their firmness and without being too mushy. Tomatoes are an easy side dish and we love making them shine. They’re healthy, fresh, and full of flavor.

Tomatoes are one of the most versatile and delicious vegetables (or fruit I guess, but I always think of them as a veggie). I love to use them in my recipes as much as I can. We often think of tomatoes as an addition to a side dish, like adding tomatoes to a salad, that we overlook them as a true side dish all on their own. They are perfect served cold or even in this delicious cooked side dish!

You Will Need

  • 4 Roma tomatoes
  • Shredded Mozzarella
  • Shredded Parmesan
  • Prosciutto

Other Supplies Needed

  • Baking sheet
  • Foil
  • Non-stick spray

Directions

  1. Set oven to broil
  2. Slice Roman tomatoes in half
  3. Using a spoon, gently remove a little bit of the center of each tomato
  4. Fill each tomato with mozzarella, a small piece of prosciutto, and top with mozzarella
  5. Broil for 8-10 minutes or until you see slight browning on the cheese
