In my last post I mentioned that we like to spend a lot of time at the beach. In the spirit of warmer weather and longer days, we whipped up these cute Seashell Pearl Cookies today. We are dreaming about the beach! These cookies are so delicious and didn’t last long….

As you might recognize, these cookies start with Madelines. Madeleines are very small sponge cakes with a shell-like shape that comes from being baked in shell-shaped pans. Perfect for making seashell cookies! Want to bake your own Madeline cookies? Find the cookie mold HERE.

You can get Madeline cookies in the bakery section of any grocery store. I also get them at Costco. My kids LOVE them.

Typically, Madeline cookies have a bump on one side from baking. In order to made these seashell pearl cookies, you’ll want to shave that small bump away (and eat the shavings haha!). It’s easiest to use a simple bread knife for this job.

I used fluffy white whipped frosting, food coloring, and edible pearls. You can also make your own homemade frosting if you prefer!

You can make the filling any color you like, especially if you have a color theme for your party. Today I made light blue and light pink. As you can see, you can even add different colored pearls. No matter what, they will look adorable!

Using a frosting or butter knife, add the frosting to the underside of one Madeline cookie. Make the layer of frosting thicker toward the opening of the seashell and thinner where the two Madeline cookies will come together. This will help give the cookies that perfect seashell shape before adding the edible pearls.

How to Make Seashell Cookies with a Pearl

You Will Need

  • Madeline Cookies
  • White frosting (pre-made or homemade)
  • Food coloring
  • Edible “pearls” or decorating dots (found in the baking isle next to the sprinkles)
  • Small mixing bowls
  • Spoons
  • Butter knife or frosting knife
  • Bread knife

Directions

  1. Using white frosting and food coloring, mix up various colors in small mixing bowls as desired for the seashell cookie filling. I used pink and blue.
  2. With a bread knife, shave off the bump on the underside of the Madeline cookies.
  3. With a butter knife, spread the colored frosting on the cookies. Use a thinner amount where the two cookies will connect and a thicker amount toward the opening of the seashell.
  4. Place a second cookie on top. The frosting will keep the cookies together. Pinch the ends together gently so it looks like the seashells are opening up.
  5. Add an edible pearl to the seashell cookie!
