These Strawberry Cheesecake Bars are insanely delicious! I should warn you in advance! Cooled to perfection, the creamy cheesecake strawberry squares are on top of a buttery graham cracker crust. Easy and tasty, these bars are a wonderful treat for a summer afternoon or an evening treat any time of year.

This is a family-friendly dessert idea, so get the kids involved! They are SO good at helping with simple step-by-step directions. You can top the bars with fresh strawberries, whipped cream, or even strawberries! Have a birthday celebration? Stick candles in it and celebrate! This dish is gorgeous and celebration-worthy:)
The ingredients for Strawberry Cheesecake Bars include graham cracker crumbs, sugar, and melted butter for the crust. You will also need Cool Whip, cream cheese, powdered sugar, and strawberry pie filling. That’s all! You can decorate the top with anything that your heart desires, however, the bars are gorgeous on their own too!
Blend the entire box of graham cracker crumbs, melted butter, and granulated sugar. Butter smells SO good with graham crackers! Pour the crust mixture into a 9″x13″ dish. After that, press the mixture down into the dish to create a crust. Kids are fabulous at this job! I recommend a rubber spatula for this part.

Strawberry Cheesecake Bars
Once you’ve quickly baked the crust (for about 10 minutes), the cheesecake filling goes on top. The cheesecake mixture is made of defrosted Cool Whip folded or gently blended into room-temp cream cheese, vanilla extract, and powdered sugar. It’s important to let the cream cheese get to room temperature so that it mixes easily without big lumps.
Pour the Strawberry pie filling on top and spread it evenly across the dish. After that, cover the dish and refrigerate for at least 3 hours. If you’re in a hurry, you can freeze the dish for an hour before putting it in the refrigerator. You can also make this dish a day in advance and refrigerate it overnight. Cut them into squares and enjoy!

Strawberry Cheesecake Bars Recipe
Equipment
- 2 Mixing Bowls
- Mixing Spoon or Electric Mixer (on Low)
- Ungreased 9″x13″ Baking Dish
- Spatula
- Foil
Ingredients
For the Crust:
- 1 box Graham Cracker Crumbs
- ¾ cup Melted Butter
- ⅓ cup Granulated Sugar
For the Filling:
- 2 (8 oz) Bars of Cream Cheese (at Room Temp)
- 1 cup Powdered Sugar
- 2 TSP Vanilla Extract
- 8 oz Tub of Cool Whip (Defrosted)
- 21 oz Can of Strawberry Pie Filling
Instructions
For the Crust:
- Preheat oven to 350°
- In a mixing bowl, combine the box of graham cracker crumbs, melted butter, and granulated sugar.
- Pour the mixture into the baking dish
- Press the crust down evenly around the dish to create a “crust”
- Bake for 10 minutes
- Allow baked crust to cool
For the Filling:
- In a mixing bowl, mix the room-temp cream cheese, vanilla extract, and powdered sugar
- Fold in the defrosted Cool Whip (or mix with an electric mixer on low speed)
- Spread the cream cheese mixture evenly over the cooled crust
- Spread the Strawberry Pie Filling over the cream cheese mixture
- Cover with foil and refrigerate for at least 3 hours
- Cut into squares and enjoy!
