Easter Cookie Bars

We are such huge fans of cookie bars, espectially Easter sugar cookie bars made with Peeps! These pretty Easter M&M’s cookie bars feature all of your favorite Easter candies, like chocolate bunnies and Robin eggs, plus Easter sprinkles!

Ingredients:

  1. Flour
  2. Baking soda
  3. Butter
  4. Brown sugar
  5. Granulated sugar
  6. Eggs
  7. Vanilla extract
  8. Easter candy (chocolate bunnies, M&M’s, mini Robin eggs, pastel sprinkles)

Optional Ingredients

  • Shredded coconut / coconut flakes
  • Nuts (like pecans, walnuts, or almonds)
  • White chocolate chips
  • Graham cracker crumbs
Dry ingredients

Instructions:

In a mixing bowl, stir flour and baking soda together. In a separate mixing bowl, add butter, egg, vanilla, and sugar with a hand mixer or stand mixer.

Cookie dough

Slowly add the flour mixture to the dough. Once fully combined, add in the Easter M&M’s! Fold them into the cookie dough using a spoon or spatula.

Add M&Ms to the cookie dough

Spread the cookie dough onto a baking sheet prepared with foil or parchment paper (to prevent sticking). Top with additional M&M’s and pastel sprinkles.

Tip

Put nonstick cooking spray on your fingertips and/or a spatula to spread the cookie dough without sticking.

Bake the cookie dough for 18-20 minutes. Immediately after removing the pan from the oven, gently place the chocolate Easter bunnies and mini Robin Eggs on top. Lightly press them into the dough and allow to cool completely before slicing and serving.

  • Mixing Bowls
  • Measuring cups/spoons
  • Electric Mixer
  • 13×9 cookie sheet
  • Foil or parchment paper
  • Spatula
  • sharp knife

Ingredients 

  • cup all-purpose flour
  • 2 teaspoon baking soda
  • ¾ cup butter (softened to room temperature)
  • ¾ cup brown sugar
  • ¾ cup granulated sugar
  • 2 eggs
  • 2 teaspoon vanilla extract
  • cup Easter M&M's
  • Hershey's chocolate Easter bunnies
  • Mini Robin Eggs
  • pastel sprinkles

Instructions 

  • Preheat oven to 350℉
  • Line a 13×9 baking pan with aluminum foil or parchment paper
  • In a mixing bowl, stir flour and baking soda together. Set aside.
  • In a separate mixing bowl, add butter and sugars. With a stand or handheld mixer, mix on medium until creamed together.
  • To the sugar mixture, add the eggs and vanilla. Mix on low until fully combined.
  • Scrape the sides of your bowl well with a spatula. Add half of your flour mixture. Mix on low until the flour is combined. Repeat with the remaining flour.
  • Add ½ cup of M&M candies and fold in carefully with a spoon or spatula.
  • Add dough to your prepared 9×13 pan. Spread the dough evenly in the pan. The dough will be very sticky. You can lightly spray your hands with a nonstick spray.
  • Top with remaining M&M candies and sprinkles
  • Bake for 18-20 minutes
  • Immediately after removing the pan from the oven, gently place the chocolate Easter bunnies and mini Robin Eggs on top. Lightly press them into the dough and allow to cool completely before slicing and serving.

Notes

Storage:
These bars stay fresh for up to a week if kept in a closed container.
