If you follow me on Instagram, then you know we surprised our kids in the BEST way this Christmas. Our kiddos are 7 and 8 years old. We’d like to introduce you to Cindy Lou! She is our Christmas dog, and has brought sooooo much joy to Smart School House.

We lost our very, very old pup around the first month of school. It hit us hard, as I’m sure so many of you have experienced. Mr. Smart School House and I got that dog in college. That pupper was with us for our college graduation, our wedding, the purchase of our first home, and the birth of BOTH our kids, and many, many relocations. The start of 2nd and 3rd grade was wonderful for our kids, but the experience of losing a dog is something we’ll never forget. So here we were, in our new home with all this space and love for a dog… just waiting for the right time. Save this Million Dollar Red Velvet Poke Cake recipe because everyone is going to want to know how you made it:

You Will Need

  • 1 box of red velvet cake mix (or a homemade recipe of choice). Usually includes: water, oil, and eggs
  • 2 tubs of cream cheese frosting (or homemade recipe of choice)
  • White chocolate chips
  • Red sprinkles

Supplies Needed:

  1. Baking Dish
  2. Toothpicks to test if the cake is cooked through
  3. Non-stick cooking spray
  4. Wooden spoon or some sort of cooking utensil for poking holes
  5. Electric mixer
  6. Mixing bowl
  7. Spatula

Directions

  1. Preheat oven to 350º (or based on the baking directions of your cake mix and baking dish)
  2. Prepare baking dish with non-stick spray
  3. Bake red velvet cake
  4. Let the cake cool. If it’s slightly warm, that’s ok.
  5. Poke holes in the cake as seen in the pictures, with the end of a wooden spoon or similar kitchen utensil.
  6. Heat 1 tub of cream cheese frosting at 15 second intervals until it is melted. Usually 2-3 intervals is all it takes.
  7. Pour the melted cream cheese frosting over the red velvet cake poked with holes, allowing it to absorb into the cake and holes.
  8. Let the melted frosting cool.
  9. Cover the cake with the 2nd tub of frosting.
  10. Add white chocolate chips and sprinkles on top! If you’re making it for Christmas, use additional green sprinkles. Making this for the 4th of July or Memorial Day? Add blue sprinkles! So festive and fun.
