My BBQ Chicken Bubble Up Pizza Cups are bound to be a hit with your family! They are a fun appetizer, lunch, or dinner. I love flexible recipes like that. Served up warm with a side of ranch, these bubble-up pizza cups disappear quickly!

BBQ Chicken Bubble-Up Pizza Cups

Your favorite buttery soft biscuits combined with chicken covered in BBQ sauce and topped with lots of melted cheese. Once they are popped out of the muffin tin, you can eat them with a fork or eat them with your hands like cheesy pull-apart bread. Fun to make and fun to eat!

Ingredients:

  1. Pillsbury Grands Biscuits
  2. Shredded chicken
  3. BBQ sauce
  4. Shredded mozzarella
  5. Diced purple onion
  6. Toppings of choice

Begin by cutting each biscuit round into 8 smaller pieces (cutting the biscuits in half twice). Place the cut-up biscuits pieces into a mixing bowl with the shredded chicken and BBQ sauce. Gently stir until the BBQ sauce is mixed evenly. Prepare a couple of standard-size muffin tins with non-stick spray. Add the BBQ chicken pizza mixture into the cups so that they are completely full.

You can also use mini or jumbo-size muffin tins, simply adjust the baking time and the amount of chicken mixture added to each cup. Then, top each one with a generous amount of mozzarella cheese. If you like purple onion on your BBQ chicken pizza, sprinkle a little chopped onion over the cheese.

The bubble up pizza cups will bake for about 17-20 minutes. Sprinkle on some chives or diced green onions (optional). Let the bubble-up pizza bites cool for a couple of minutes and then remove them from the muffin tin. Thanks to the non-stick spray, they will come out easily!

Equipment

  • Traditional size muffin baking tin – can use mini muffin or jumbo muffin tin if preferred!
  • Mixing bowl
  • Non-stick spray
  • Dipping choices, like ranch or extra BBQ sauce

Ingredients 

  • Diced purple onion
  • Toppings of choice, we use green onion or chives
  • Ranch and/ BBQ sauce for dipping

Instructions 

  • Preheat your oven to 375℉
  • Separate the 8 biscuits and cut each one into 8 smaller pieces (Each biscuit is cut in half twice)
  • Place the cut biscuits, chicken, and BBQ sauce in a mixing bowl
  • Gently mix the ingredients together until the BBQ is evenly distributed
  • Put the BBQ chicken mixture into the muffin tin until each cup is full
  • Add a generous amount of shredded mozzarella cheese on top
  • Sprinkle diced purple over the cheese
  • Bake for 17-20 minutes or until each BBQ Chicken Bubble Up Pizza Cup is baked through
  • Let cool for a few minutes
  • Remove from the muffin tin and serve with additional toppings of choice, like ranch and/or additional BBQ sauce

Notes

*Can be eaten with a fork or by hand like pull-apart cheese bread. Enjoy!
