Our Lucky Charms Fudge is pure fun and a lot of sweet! When is the last time you made something this colorful, happy, and absolutely MAGICAL?  This rainbow fudge is the perfect way to catch a leprechaun. Since unicorns have become so popular, some might call this unicorn fudge now they have started making unicorn marshmallows for the cereal. Whether you make it for St. Patrick’s Day or if you are just in the mood for a fun treat, this swirly fudge is so fun!

Your favorite cereal marshmallows in a swirly twirly white fudge. Best of all, Lucky Charms Fudge is so simple to make. A magical dessert for everyone! Seriously, when I say this is easy, it takes less than 30 minutes to make. My favorite part is picking out the Lucky Charms marshmallows, but that happens to be my kids’ favorite part too:)  That’s a win-win in my book! Who’s feeling lucky?!

Rainbow Fudge Made with Lucky Charms

Ingredients:

  • White chocolate chips
  • Vanilla frosting
  • Vanilla CandiQuik
  • Marshmallows from a box of Lucky Charms
What is melting chocolate?

It’s a chocolate found in the baking aisle at any grocery store near the chocolate chips and is designed for melting, dipping things like strawberries or pretzels, and then hardening.

You will also need a square baking dish (like an 8 x 8), parchment paper, spoons for mixing, and microwave-safe bowls. Don’t have parchment paper? Tin foil with non-stick spray also works! I picked out 3 gel food colors: blue, pink, and green. It’s also ok if you don’t have gel food coloring. Any kind will work!

Instructions:

Begin by melting the chocolate chips and CandiQuik in 30-second intervals, stirring between. After that, add the entire tub of vanilla frosting to the melted white chocolate and microwave again for 30 more seconds. Once everything is melted and smooth, separate it evenly into 3 bowls and quickly stir in food coloring until the desired shades are achieved. Did some of your chocolate harden up before you were able to put it into the baking dish lined with parchment paper? That’s ok! Simply pop it into the microwave and it will melt again.

Lucky Charms in Fudge

Add the colored melted fudge into your parchment-lined baking dish in various ways. You can’t go wrong here! Just separate the colors throughout the dish. Then, add 1/2 of your marshmallows on top.

Next, use a knife or the handle of a spoon to swirl the colors together. Some of the marshmallows will end up covered in the fudge, which is exactly what you’re aiming for. When you’re happy with your swirling design, add the second half of the marshmallows on top.

Finally, place the dish in the refrigerator for an hour. That’s all it takes to fully harden into fudge! Remove the fudge from the refrigerator and cut it into squares using a sharp knife. I love how some of the marshmallows are sunken into the rainbow fudge and some sit up on top. It’s so pretty! Cover and store leftover fudge in the refrigerator.

Lucky Charms Fudge

Equipment

  • 8 x 8 square baking dish
  • Parchment paper (or foil with non-stick spray)
  • Microwave safe mixing bowls
  • Spoons for mixing
  • Knife for cutting into squares

Ingredients 

  • 1 cup white chocolate chips
  • 1 tub vanilla frosting
  • 8 ounce (half the package) vanilla CandiQuik – found near the chocolate chips at any grocery store
  • ½ cup Marshmallows from a box of Lucky Charms

Instructions 

  • Line the baking dish with parchment paper
  • Melting the chocolate chips and CandiQuik in 30 second intervals, stirring between, until smooth
  • Add the entire tub of vanilla frosting to the melted white chocolate
  • Microwave again for 30 more seconds
  • Mix to ensure the melting chocolate is combined with the melted frosting
  • Once everything is melted and smooth, separate it evenly into 3 bowls
  • Quickly stir in food coloring until the desired shades are achieved. Work quickly as it hardens rather quickly. It can be reheated in the microwave if needed!
  • Add the colored melted fudge into your parchment lined baking dish in various ways.
  • Add 1/2 of your marshmallows on top
  • Use a knife or the handle of a spoon to swirl the colors together
  • When you’re happy with your swirling design, add the second half of the marshmallows on top
  • Place the dish in the refrigerator for an hour
  • Remove the fudge from the refrigerator
  • Pull the fudge out of the baking dish
  • The parchment paper will easily peel off the sides of the fudge
  • Cut it into squares using a sharp knife
  • Cover and store leftover fudge in the refrigerator
