Lucky Charms Fudge

When is the last time you made something this colorful, happy, and absolutely MAGICAL? Our Lucky Charms Fudge pure fun (and a lot of sweet!). This rainbow fudge is the perfect way to catch a leprechaun. Since unicorns have become so popular, some might call this unicorn fudge now they have started making unicorn marshmallows for the cereal. Whether you make it for St. Patrick’s Day or if you are just in the mood for a fun treat, this swirly fudge is so fun!

Your favorite cereal marshmallows in a swirly twirly white fudge. Best of all, Lucky Charms Fudge is so simple to make. A magical dessert for everyone! Seriously, when I say this is easy, it takes less than 30 minutes to make. My favorite part is picking out the Lucky Charms marshmallows, but that happens to be my kids’ favorite part too:)  That’s a win-win in my book! Who’s feeling lucky?!

To get started, you need 1 container of vanilla frosting. You will also need white chocolate chips and vanilla CandiQuik melting chocolates. What is melting chocolate? It’s a chocolate found in the baking aisle at any grocery store near the chocolate chips. It’s designed for melting, dipping things like strawberries or pretzels, and then hardening. It’s SO easy to work with. Finally, you’ll need a box of Lucky Charms cereal and food coloring.

You will also need a square baking dish (like an 8 x 8), parchment paper, spoons for mixing, and microwave safe bowls. Don’t have parchment paper? Tin foil with non-stick spray also works! I picked out 3 gel food colors: blue, pink, green. It’s also ok if you don’t have gel food coloring. Any kind will work!

Begin by melting the chocolate chips and CandiQuik in 30 second intervals, stirring between. After that, add the entire tub of vanilla frosting to the melted white chocolate and microwave again for 30 more seconds. Once everything is melted and smooth, separate it evenly into 3 bowls and quickly stir in food coloring until the desired shades are achieved. Did some of your chocolate harden up before you were able to put it into the baking dish lined with parchment paper? That’s ok! Simply pop it into the microwave and it will melt again.

Lucky Charms in Fudge

Add the colored melted fudge into your parchment lined baking dish in various ways. You can’t go wrong here! Just separate the colors throughout the dish. Then, add 1/2 of your marshmallows on top. Next, use a knife or the handle of a spoon to swirl the colors together. Some of the marshmallows will end up covered in the fudge, which is exactly what you’re aiming for. When you’re happy with your swirling design, add the second half of the marshmallows on top.

Finally, place the dish in the refrigerator for an hour. That’s all it takes to fully harden into fudge! Remove the fudge from the refrigerator and cut it into squares using a sharp knife. I love how some of the marshmallow are sunken into the rainbow fudge and some sit up on top. It’s so pretty! Cover and store leftover fudge in the refrigerator.

You Will Need

  • 1 cup of white chocolate chips
  • 1 tub of vanilla frosting
  • 8 oz (half the package package) vanilla CandiQuik – found near the chocolate chips at any grocery store
  • 1/2 cup of marshmallows from a box of Lucky Charms

Other supplies needed:

  • 8 x 8 square baking dish
  • Parchment paper (or foil with non-stick spray)
  • Microwave safe mixing bowls
  • Spoons for mixing
  • Knife for cutting into squares

Directions

  1. Line the baking dish with parchment paper
  2. Melting the chocolate chips and CandiQuik in 30 second intervals, stirring between, until smooth
  3. Add the entire tub of vanilla frosting to the melted white chocolate
  4. Microwave again for 30 more seconds
  5. Mix to ensure the melting chocolate is combined with the melted frosting
  6. Once everything is melted and smooth, separate it evenly into 3 bowls
  7. Quickly stir in food coloring until the desired shades are achieved. Work quickly as it hardens rather quickly. It can be reheated in the microwave if needed!
  8. Add the colored melted fudge into your parchment lined baking dish in various ways.
  9. Add 1/2 of your marshmallows on top
  10. Use a knife or the handle of a spoon to swirl the colors together
  11. When you’re happy with your swirling design, add the second half of the marshmallows on top
  12. Place the dish in the refrigerator for an hour
  13. Remove the fudge from the refrigerator
  14. Pull the fudge out of the baking dish
  15. The parchment paper will easily peel off the sides of the fudge
  16. Cut it into squares using a sharp knife
  17. Cover and store leftover fudge in the refrigerator
