Creamy Cowboy Caviar is a fresh, flavorful side dish dip that is perfect for any picnic, potluck, or party, and is made in under 15 minutes! This is an indulgent version of Texas Caviar with a creamy, cheesy sauce. It’s popular for a reason, and we make this chip all year. It makes a big batch, so it is an ideal party appetizer. From game day to poolside or even Cinco de Mayo, there’s a great reason to whip up this scrumptious dip!

Creamy Cowboy Caviar
Have you heard of Cowboy Caviar? It’s sometimes called Mexican Caviar or Texas Caviar. Our recipe includes corn and seasoned tomatoes in a creamy sauce. Everybody loves dipping Fritos in it! However, for a lighter snack, you can also dip crisp bell peppers in it as well. Pretty much anything you like to dip will work. Think tortilla chips, wheat crackers, or veggies.

Creamy Cowboy Caviar Ingredients
- Whole kernel corn, drained (or fresh corn!)
- Rotel
- Shredded cheddar cheese
- Green onion
- Sour cream
- Mayonnaise

Optional Ingredients
Consider some of these additional ingredients to add more color, flavor, and taste:
- Black beans
- Pinto beans
- Kidney beans
- Black eyed peas
- Red onion
- Garlic powder
- Chili powder
- Cumin
- Green bell pepper
- Fresh cilantro
- Other fresh vegetables
Combine all of the ingredients in a large bowl with a spatula or spoon. Kids are great at helping with this part! If you have kids around, get them involved and show them how easy this recipe is. Rather than serving the dip in a large mixing bowl, I like to pour it into a more presentable bowl. It makes dipping Fritos, chips, or veggies easier. If you ask me, the trick to the best possible cowboy caviar is to cover it and allow it to chill for an hour before serving. The chill time helps the flavors marinate. When it is nice and cold, it also has a thicker texture! Be sure to stir it one last time before serving and keep the leftovers refrigerated.

To spice up the cowboy caviar a little more, consider using the hot Rotel tomatoes, adding sliced jalapeno, or adding a few spoonfuls of salsa. It’s wonderful with avocado slices on top with some cracked pepper. Additionally, fresh lime juice is a tasty twist if you like!
Storage
Refrigerate leftovers in an airtight container for up to 3 days.

Cowboy Caviar Recipe
Equipment
- Large mixing bowl
- Spatula or mixing spoon
- Measuring cups
- Serving bowl
- Plastic wrap or foil
Ingredients
- 2 cans whole kernel corn, drained
- 1 can Rotel, drained (these diced tomatoes and green chilies)
- 2 cups shredded cheddar cheese
- 6-8 pieces of green onion, sliced/chopped
- 1 cup sour cream, light or regular
- 1 cup mayonnaise, light or regular
- Fritos, chips, crackers, or veggies for dipping
Instructions
- Add all ingredients to a large mixing bowl
- Gently mix until fully combined with a spatula or spoon
- Transfer the dip to a serving bowl
- Cover with plastic wrap or foil
- Refrigerate for 1 hour
- Serve chilled
- Store leftovers in the refrigerator
