It’s the perfect dinner for a busy family like ours!

Tortilla Chip Enchiladas
I don’t know about you, but this time of the year is busy! No matter how hard I try to plan or organize, the shorter daylight hours make dinnertime arrive so quickly. Every season is a busy one so I’m always a fan of super easy and comforting meals that my family will love. I like when things can be made quickly and with simple ingredients.

Pin It NowWe love all the flavors in this dish! Beef, diced green chiles, salsa, tortilla chips, and CHEESE!!! Comfort food at its best! This recipe should definitely go into your regular dinner rotation.
Ingredients:
- Ground beef – can be substituted for shredded chicken or ground turkey
- Tortilla chips
- Shredded cheese
- Red enchilada sauce
- Diced green chilies
- Ground cumin
- Salsa

Instructions
Begin by browning the ground beef. Once it’s cooked, drain it completely and start adding in the flavor. We add salsa, diced green chilies, and cumin. You can definitely get creative with this part. If you like your enchiladas extra spicy, consider adding jalapeños, onions, or anything you like in enchiladas.

Next, add a bag of tortilla chips to a large mixing bowl. This is where all the time saving loveliness of this recipe happens. Break the chips up just a little bit as seen above. Don’t crumble them into tiny pieces. The tortilla chips will eventually soften up like corn tortillas in traditional enchiladas.

After that, add the beef mixture and a cup of cheese to the mixing bowl. Then, pour in the enchilada sauce and continue to mix everything together. Kids are good at this part! I love when I can give my kids jobs when I’m cooking. Oftentimes, they’re more likely to try new foods when they take part in making it.

Once everything is mixed up, transfer it all to a baking dish prepared with nonstick spray. Everything should fit perfectly into a 9″x13″ dish.
Tortilla Chip Enchiladas

Lastly, cover the top of the tortilla chip enchiladas with cheese, just like traditional enchiladas. You can also add on desired toppings, like olives if you prefer. Cover with foil and bake for a little less than an hour.

The tortilla chips cook just like regular corn tortillas! These lazy enchiladas are so much easier than wrapping up all the ingredients into individual tortillas. The bubbly cheese mixed with the flavorful enchilada sauce is my favorite!

Sprinkle additional onion or green onions on top. I love to add sour cream and fresh guacamole. Serve with rice, beans, and a salad. The leftovers are SO delicious!

Tortilla Chip Enchiladas
Equipment
- 9″x13″ baking dish
- Non-stick spray
- Foil
- Large mixing bowl
Ingredients
- 1 pound ground beef (can be substituted for shredded chicken or ground turkey)
- 1 bag tortilla chips (about 12 ounces)
- 3 cups shredded cheese
- 1 28 ounce can of red enchilada sauce
- 1 4 ounce can of diced green chilies, drained
- 1 teaspoon ground cumin
- ½ cup salsa
Instructions
- Pre-heat oven to 350°
- Brown ground beef and drain the fat
- Add diced green chilies, salsa, and cumin to the ground beef and mix completely
- Pour a bag of tortilla chips to a large mixing bowl and gently break up the chips a little bit
- Add the beef mixture over the chips
- Pour the entire can of enchilada sauce in the bowl
- Add 1 cup of cheese and gently mix everything together
- Prepare the baking dish with non-stick spray
- Pour tortilla chip enchilada mixture into the baking dish
- Sprinkle remaining 2 cups of shredded cheese on top (or more to make sure it’s covered completely)
- Cover with foil
- Bake for 50 minutes

So, the chips don’t get hard in the recipe? Just wondering, I don’t want to bite into this and have a hard chip in the dish. Did you say it safes like a tortilla?

Hi Janet. Since the tortilla chips are crumbled and then smothered in enchilada sauce, they soften in the oven. Because they are tortilla chips, they will still taste like tortillas after baking (just like corn tortillas in traditional enchiladas). Hope that helps!
